#desserttime .................. One of my all time favourite desserts is a humble mix of rice flour, milk, saffron, cardamom, sugar and almonds. Sweetly titled phirni or fereni, this mouth watering madness is a must try. It is said that the origin of this dessert was both in Indian subcontinent and Iran. Over a period of time,there have been many a additions to this recipe and variations as well, but for me the original recipe still comes first as some things just shouldn't be changed! ........ After a good hearty indian meal, one definitely needs to finish it off with a dessert and what better than phirni. Light on the tummy as it's non-fried, made with rice, less sweet, I make sure that I try it whenever I go to an Indian restaurant. ... Well, being a vegetarian does restrict me from going all out with respect to food tasting, however I don't let it deter my spirits, and as an ardent foodie, I make sure I try out cuisines from various parts of India. Wazwan, is one such cuisine, which originates from Kashmir, the land of timeless beauty. While I still have to travel to the mystic valley, I got to taste the amazing Wazwan cuisine at @chorbizarreindia Bursting with flavours, this epic vegetarian thali is called Tarami. The veggies are served on a bed of rice, since rice is the staple dish of Kashmiris. In the pic, in a clockwise direction, there's paneer, spinach, aubergine, tomato chutney, lotus stem and a big dum potato resting in the middle. With no use of onions, garlic or ginger, this cuisine is surely meant to leave you wanting for more. The use of spices like fennel seeds, cumin seeds, bay leaves and other ground masalas is curated so nicely and I just didn't miss onions or garlic. And now talking a bit about @chorbizarreindia which has surely made me one of their favourite client's. The hospitality, food, ambience is mesmerizing and i will recommend this place to everyone visiting Delhi. ..... Being a street food addict, I have been visiting #evergreensweethouse in #greenpark #delhi but after the recent visit, I will make sure that I go here to satisfy my chaat senses every month. My husband and I alongwith our lil princess (who can't eat outside food right now as she's only 9 months old) ordered the spl chole bhature, chaat platter and pav bhaji. Chole Bhature were really tasty. Bhaturas were fluffy and soft, served at the right temperature. Chole weren't spicy and all in all we could have definitely ordered one more. Chaat platter was a combo of bhelpuri, golgappas, dahi papdi and tikki. While the golgappas and dahi papdi were yummy, tikki was a bit bland and bhelpuri was soggy. Pav bhaji on the other hand, unlike other chaat places in Delhi, wasn't oily, and was a good blend of veggies and spices. Though it's difficult to get Mumbai pav bhaji taste here in Delhi, but this one can be savoured well. ..... It's a must visit place when you are in Delhi. While a lot of spoken about the religious aspect of Varanasi, not much is heard about it's delicious food, mushrooming cafes and the humbleness of people. ...................................... One such cafe which I've been frequenting for the past few years is Flavours which is located in Lanka. The coffee, whether hot or cold, is served just at the right temperature and needless to say is super refreshing. The snacks menu offers variety and I tried the veg pizza which is an oven baked one but the crunchiness of the crust can easily make it compete with a wood fired pizza. With all the goodness of the food, you get to soak into the humbleness of their staff, as their attitude is very comforting and they even remember their guests. #healthybreakfastideas Rava Idli Tadka with Coconut Chutney I am an ardent fan of south indian food and can literally live on idli, dosa and uttapam. As part of my #healthybreakfastideas series, I made homemade rava idli with coconut chutney. The tadka on the top is of finely chopped onions, tomatoes, curry leaves, mustard seeds, whole red chilli and salt. Being made of rava, this breakfast is more filling vis-a-vis rice idli. I kickstarted the festive weekend of #diwali with this yummy and simple breakfast. Coconut chutney is very healthy and full of vitamins, minerals and dietary fibre. A word of advise - the tempering to the coconut chutney should only be done once the idlis are ready to serve. This ensures the freshness of the chutney. Macaroni with Baked Beans I still clearly remember the day when my bestie told me about this recipe and it definitely made me think - how can baked beans taste good with macaroni. Since the texture of baked beans is mushy, we are used to trying it with a crispy toast or in Mexican food but not with macaroni pasta shells. It didn't take me time to try this recipe and I must admit, it does account for a hearty, wholesome meal. You can try it for breakfast or for supper or when you are alone at home and don't want to indulge in elaborate cooking. This one tops my chart as a recipe which is easy to cook with few simple ingredients. Recipe - 200 gms macaroni pasta shells 1/2 can of #heinzbakedbeans 1 medium size red onion (thinly sliced) Seasoning - salt, black pepper, chilli flakes, tomato ketchup, mixed herbs #keyaseasoning (oregano, basil, parsley) Boil macaroni pasta shells till they are tender, remember not to overcook them. Always add olive oil and salt while boiling any form of pasta. In the meanwhile, saute onions till they turn bright pink. Now add #heinzbakedbeans and macaroni pasta. Do add lill bit of water on which pasta was boiling. Complete this dish with the seasoning. #healthybreakfast Pomegranate Banana Smoothie One of my absolute favourites! Nothing can beat a tall, refreshing glass of smoothie in hot, humid summers. While it might seem easy just to throw in your favourite fruits in the blender, it's really imperative to get the proportions right in order to extract maximum flavour from the mixture of fruits and curd. Here I am putting together the recipe for one glass of this #yummylicious smoothie 1 ripe banana 1/2 cup of pomegranate seeds 5 tbsp of low fat yoghurt 4 cubes of ice Blend the banana, pomegranate seeds and yoghurt on full speed for about 5 mins. Once you start noticing a nice pink colour, it's time to add the ice cubes and give it another swirl. Pour this in a tall glass and enjoy this powerhouse drink in the morning for a wonderful start. #tofu , Bell Pepper & Onion Dish Lately, Tofu has caught the attention of chefs around the world, who have taken this ingredient to another level by using it in dishes from breakfast to dessert. As a #homestylechef , I love experimenting with tofu in a savoury style. It's health benefits are in abundance being rich in protein and light on the tummy. Today, i made a simple yet yummylicious dish for lunch, with few ingredients. Here's the recipe for all tofu lovers: 1. In a pan, heat olive oil, and throw in one onion, peeled and cut into petals. 2. Once the onion is caramelized ( this adds extra flavour to the dish), add one red bell pepper diced into cubes. 3. Cover the pan with a lid and let it simmer for 5 mins. Plz note the time here as we don't want the bell pepper to overcook. 4. Now add tofu (200-250 gms), cut it into cubes as well. This dish is not heavy on spices so all we need to add is salt, red paprika, cumin powder (just a sprinkle) and tomato sauce. Coat tofu well with all spices, let it simmer covered for 5 mins. Serve this dish with brown rice and enjoy your healthy and tasty meal!
