Why do baristas pour swans? It's not actually about the flare, but it's about using all the basic fundamentals in pouring milk. In order to make the base of a swan you must swivel like the base of a tulip. Pulling back for the body is like the middle and top parts of a Rosetta, and making the neck is like poppin a small heart in a drink. NEW techniques learned by practicing swans: 1) Scooping low to draw a neck 2) Pouring high to intentionally delete part of a Rosetta to make the body 3) Pouring slow, low, and with intention 4) Pouring multiple designs in one cup and learning how to gage how much room you have left in the cup 5) Not pouring in one complete motion.
