Khaman dhokla/Indian chickpea flour savoury cake...God knows how many attempts I have made to perfect this lovely snack, but it has finally paid off. Usually ENO fruit salt is used to make instant dhoklas. But you cannot be assured of the same result everytime if using ENO. That's why this recipe... Chickpea flour/besan 150g Baking soda 1/4tsp Baking powder 1tsp Lemon juice 1tbsp Pinch of turmeric powder Salt 3/4tsp Water as required Method: Whisk together chickpea flour, salt , turmeric and water. The consistency of the batter should be that of a dosa/pancake batter. Keep it covered in a warm place for half an hour. In the meanwhile, grease an 8inch round pan and keep the water in your steamer/pressure cooker (remember to remove the weight) for boiling. Add the baking soda , baking powder & lemon juice to the batter and mix quickly but gently. As it starts frothing, pour the batter into your greased pan and place it in your steamer. Cover and cook on high for 20 minutes or a skewer inserted in the middle comes out clean. Switch off heat and let stay in the steamer covered for another 10 minutes. Now remove the pan out of the steamer and allow it cool. Let's make the tadka now...heat a teaspoon of oil, splutter a tsp of brown mustard seeds & a teaspoon of sesame seeds. Add slit green chillies, few curry leaves & a pinch of asafetida/hing. Now add 1cup of water into the tadka and bring to a boil. Add a pinch of salt and 1/2tsp lemon juice. Remove from heat and pour the tadka water on the dhokla and allow the dhokla to absorb all the water. Cut them into pieces and garnish with some grated fresh coconut and chopped fresh coriander. Note: Always sift the flour before using to remove lumps and make it airy. The purpose of adding water in the tadka is to make the dhoklas moist - a trick used by shops selling them. Use more water if you wish. You can add fresh grated ginger, garlic or chopped green chillies to the batter as well. #greenwich #greenwichyogaandveganfestivalz

The fake out!! We made cashew Mac and cheese last night, and someone wouldn’t share.... The creamy cheese sauce ingredients were 1 Russet Potato, 10 Baby Carrots, Nutritional Yeast, Cashews, and Pink Salt! We usually use sweet potatoes so the carrots 🥕 were a fun change! #toddlerapproved

Protein Fudge. . Healthy fudge made super delicious with @cmsupplements amazing protein powder. . Ingredients:. 2 scoops @cmsupplements protein powder 2/3 cup Nut Butter (I used cashew butter) 1/2 cup Coconut Oil 2 tablespoons Cacao Powder 3 tablespoons Maple Syrup 1 teaspoon vanilla extract (optional) Favorite toppings. . Alternatively, you can add nuts to the mixture. Directions: Add everything to a small saucepan over medium heat and mix until combined. Pour into a parchment line pan. Refrigerate about 1 hour or until hardened.

The croutons are the hero here…crispy, flavorful, with a hint of coconut from the oil I used. 20 minutes from start to finish for the soup AND the croutons, and then you’ll look like the hero - TOMATO SOUP WITH RUSTIC COCONUT CROUTONS - --Rustic Croutons-- - ¼ c. coconut oil, melted 2 t. mixture of rosemary, oregano, parsley and basil (your choice) 1 t. garlic powder ½ t. salt 4 slices whole grain bread, ripped into bite-sized pieces - Preheat oven to 300 degrees. Toss all ingredients in a bowl to mix, and spread in a single layer on a cookie sheet (don’t let pieces touch). Bake for 15 minutes, turn, and bake for 15 minutes longer. Let cool. - - --Tomato Soup-- - 2 T. oil 1 medium onion, diced 2 bay leaves 2 garlic cloves, minced ¼ t. cayenne pepper ½ t. black pepper 2 14oz. cans diced tomatoes with juice 2 c. water 1 piece bread, ripped into small pieces 2 T. vermouth or white wine Salt - Over medium high heat, sauté onion in oil until soft. Stir in bay leaves and cayenne and black peppers. Add tomatoes and water, and bring to a boil. Cook for 10 minutes on a low simmer. Stir in bread and cook for 2 minutes longer. Remove bay leaves and stir in vermouth / white wine, and blend all with an immersible blender. #veganbreakfast today. Last night after making dinner, I threw peeled sweet potatoes, chopped russet potatoes, kale, and yellow onion in my cast iron. Covered it in seasoning and threw it in the oven for an hour. Now we have a super nutrient dense breakfast for the week. I feel so much healthier mentally since incorporating healthful meals in the morning!
